Copa Cabana

Claire got her first taste of our theme dinners this Friday.  This week's theme was "Caribbean"  and the Swiderskis did it up right, dressing the part.

In case you want to do your own Caribbean theme the menu was as follows:

Apps: mango salsa, chips, strawberry daiquaris and pina coladas (That is until our blender broke.  We tried to just do them over ice but that pretty much just tasted like syrup over ice so we switched to Red Stripe and wine after that). 

Entree: cajun turkey burgers with red pepper and mango and Caribbean bean salad (with Cilantro and pickles - a big hit).
Dessert - mango bread pudding (with added ice cream)

Joe quite enjoyed the pina colada - or maybe it was the umbrella he loved so much...

Megan, Joe and Nate joined us for this week but they didn't get the message to dress up.  Andrew and Trisha offered the lame excuse of "we don't have anything Caribbean to wear".  Whatever.
